Memes are the perfect medium for expressing a joke or idea by simply subverting the meaning of an existing image with new text. The best thing about a good meme format is that it can be used over and over again and express something different each time, often making the format itself funnier through repetition. Well some madlads out there get a kick out of misusing meme formats by disregarding their symbolic potential and getting intentionally too literal with it.
